A dry heat in British summertime is welcome from the damp days of this year.
One aspect of Indian food I greatly appreciate is a dry flavour during warm weather. It cools my system, and with this recipe fills me up without any heaviness.
Mellow 15 minute Summer Dhal
Serves 4 as a side.
Prep time: 15 minutes
2 large cups Red split Lentils
1 1/2 dstsp Miso paste – I used Mugi
4 cups Water*
2 tsp Garam Masala
4 dstsp dried Porcini Mushrooms
10 dashes Tamari soya sauce
2 tsp dried Onion flakes
1 tsp dried Garlic granules
Combine the ingredients and bring to the boil.
Simmer for 15 minutes, stirring occasionally unless using a *pressure cooker when i suggest using 4 1/2 cups of water and cook for 12 minutes.
Using good quality lentils will make a smooth dhal.
Serve with chapatti.
You can also add small chunks of sweet potato, carrot or beans, or any combination of vegetables or meats. It’s really simple.
