Vibrant Carrot Salad

This is a yummy and refreshing salad just for those summer months.

  • 2 Little Gem Lettuce
  • 1 cup Walnuts
  • ½ cup Flaked Almonds
  • 1/3 cup Lexia Raisins/Cranberries
  • 1/3 cup Goji Berries
  • ½ Red Onion – Finely chopped
  • ¼ Finely Chopped Cucumber – de-seeded
  • 12 Cherry Tomatoes
  • 1 DSS Balsamic Vinegar
  1. De-seed the cucumber by chopping in half and scooping them out with a teaspoon. (They can be used in a smoothie…)
  2. Coarsely grate the carrot; I use a narrow gauge mandolin.
  3. Finely chop one lettuce and half the cherry tomatoes then add all the ingredients bar one little gem lettuce and mix thoroughly.
  4. Peel the other lettuce into leaves and pile the mixture into these leaves. Serve as an nourishing accompaniment to quiches or with your evening meal as part of your essential vegetable intake.
