Also known as devils dung, this Most pungent of spices is highly prized by curry cooks. Just an eighth of a teaspoon of this ingredient, when added to cooking curries, will deeply flavour the dish. It is used because other ingredients become more pronounced, rounding all the tastes on our palate. That is why you need this spice when you cook curries!
