Dried oregano is a stock cupboard item essential for Italian tomato dishes as it complements basil. Aubergine & courgette dishes, as well as stuffed peppers, moussaka & meat loaf all take the flavour of oregano well. Roast beef, lamb & pork develop a full-bodied taste & mouth-watering crust when rubbed with a mixture of paprika, sumac, oregano & garlic before cooking.
