The flavour of sage is herbaceous, savoury & astringent, with a hint of mint. You will get the best results for sage when you use it sparingly. Fatty foods such as pork, duck & goose are all flavoured well by sage. It is an important ingredient in an authentic stuffing or dumpling recipe. Other familiar combinations are sage & onion, aubergines & tomatoes, meat loaf or roast meat. Pea, bean & vegetable soups are enhanced by the herby flavours sage brings to a dish.
