The small, red, organic aduki bean can be used as a regular bean or sprouted like mung beans. They go well when cooked in casseroles, soups and stews. It goes well as a base with cauliflower millet mash.
They can be used for sweet dishes as found in sweet dumplings called mochi.
I sprout them for their excellent nutritional qualities and their superb flavour. Sprouted organic aduki bean are high in vitamins A, B, C and E, as well as many amino acids and fibre.
