These bright white organic kidney beans make a simple and delicious soup I make quite often in winter.After soaking for 8-10 hours drain, then bring to the boil covered with plenty of fresh water.As the water boils scoop off the nitrogenous froth that floats to to the surface until no more is left. Add a bay leaf, put on the pan and cook for a further 45 minutes.Add stock in proportion to liquid and blend until smooth.Mwah!
