Whatever the origins of the word oolong, it indicates that this tea has been fermented. Indeed, this black tea is twisted, fermented and dried. At a ferment of 20% this organic leaf has a delcious balance of sweetness, mellow earthiness and pine flavours. Though I personally don’t like black teas, with its light ferment I’ve often indulged in this tea as it has a most refreshing quality that focuses my mind and gently stimulates my body. A tea to taste and savour. Brew for 3-5 minutes in 90˚C water. Many cups can be drunk from one brew so keep the kettle topped up!
