Healthy, gluten free and tasty quinoa is used as rice in South America. The balanced nutritional qualities of quinoa make it a useful grain to include in our diets. It is simple to cook in a variety of ways. The small grain will absorb the flavours of your stock when simmered or baked. Look out for a wonderful Schumaker recipe called Angelic Quinoa! I also use the flour to add flavour to my breads, cakes, muffins and pancakes.
