Pudding rice is a sweet grain that swells up when cooked, soaking up all the flavours they are cooked with. Add 4 parts milk to 1 part cream and rice, cinnamon, dried fruit and cardamom and bake on a low heat for a couple of hours. That should be enough time for a walk around the park and a cup of tea.

How to cook
In a lidded baking dish put 1 portion of rice to 3 parts milk. Add a little sweetener, cinnamon, ground cardamom and ground clove, stir well, then bake at 150˚C for 90 mins. For a perfect, warming pudding ! .
