Pudding rice is a sweet grain that swells up when cooked, soaking up all the flavours they are cooked with. Add 4 parts milk to 1 part cream and rice, cinnamon, dried fruit and cardamom and bake on a low heat for a couple of hours. That should be enough time for a walk around the park and a cup of tea.

How to cook
Rice pudding: Combine 1 part rice with 4 parts milk and 1 part cream in a lidded baking dish, add spices and fruit (try our cardamon, cinnamom and raisons). Cook on low heat (gas mark 2/150C/300F) for an 1.5 - 2 hours the grains have become soft and creamy.
