Dried Shiitake mushrooms have a wonderful smoky flavour and a meaty texture. They are one of the most culinarily versatile mushrooms for their economical price. Soak the mushrooms for 30 minutes in warm water, or add to a simmering broth e.g. a cooking pasta dish, for the last 15 minutes. They will soak up the cooking fluids of the dish when you do. Their flavour goes well with beef, venison and pasta dishes.
