The hottest of peppers, use sparingly in Thai & Japanese foods, where the light, fresh flavours of ginger, lemongrass, kefir lime leaves, galangal & coriander could be swamped by the traditional, strongly flavoured black peppercorns. These are the fully ripened fruits of the peppercorn plant which has had it’s husk removed. Whilst similar in flavour, chefs use white peppercorns to blend with pale dishes. These fully ripened peppercorns are often used in light coloured sauces & mashed potatoes.

How to cook
Grind and use powdered in white sauces, dressings and dips. Use whole in terrific terrines and with roasted meats. Use with Thai or Jpanese foods. Ideal for soups and casseroles.
