This is a most flavoursome white tea, the first leaves picked after springs last frosts. It has a delicious, vibrant flavour, more redolent of a fine green tea. Yet it has the health benefits of the first pick of tea leaves, and the caffeine too. A robust pick-me-up, best not drunk too late in the day. Brew for 3 minutes in water at 85˚C. Many cups can be brewed by one lot of leaves.

Brew for five minutes in water that has cooled to 85-95°C for 5 minutes.
