Za’atar is a delicious blend of thyme, roasted sesame seeds, sumach and a subtle amount of salt. I love using our freshly packed zaatar when I have friends over. In two bowls I put olive oil and the spice mix. As we cook we rip the bread, dunk it in the oil and then the zaatar. This staves off hunger until the main meal is ready. Use zaatar in roasted vegetable dishes, perhaps with roast potatoes, as you will find in the recipe section (soon).
