The almond (Prunus dulcis, syn. Prunus amygdalus) is a species of tree native to the Middle East, the Indian Subcontinent and North Africa. “Almond” is also the name of the edible and widely cultivated seed of this tree.

The fruit of the almond tree is called a drupe, consisting of an outer hull and a hard shell with the seed inside. Strictly speaking the almond is not a true nut. Almonds are sold shelled or unshelled. Blanched almonds are shelled almonds that have been treated with hot water to soften the seedcoat, which is then removed to reveal the white seed ’embryo’.

Nutritional information

Our fresh ground almonds are rich in dietary fiber, vitamins, proteins, and minerals and packed with numerous health promoting phyto-chemicals. Vegetable protein is considered a more sustainable source of protein than animal meat, producing a fraction of the CO2. Almonds contain a high ratio of high density lipoproteins (HDLs) to low density lipoproteins (LDLs). HDLs help lower cholestrerol in the body and aid healthy heart function. Eaten over long periods, almonds can cut down your risk of heart disease and strokes. The HDL monosaturate fats are also the same we find in unfiltered, raw olive oil, like our Sunita Greek Olive Oil.

Almonds are also high in minerals such as Magnesium and Potassium which help to maintain healthy nerve and muscle function. Magnesium also helps support a healthy immune system, keeps the bones strong and is essential in many other bodily functions.

Almonds are also a great food for diabetics. In one study, eating almonds reduced the glycemic index (GI) of the meal they were eating and therefore lowered the blood sugar after eating.

Culinary uses of Ground Almonds

Ground almonds are a versatile food. They can be included in cakes, crumble toppings, pastry, biscuits, cookies, desserts and cereals adding taste and nutrition. They are also really useful as a thickener for curries, stews and soups making them smoother and creamier.

    After reading an article on ground almonds in the Eat Wholefoods newsletter I thought I’d try giving themn a go. They are really useful. I use them for thickening soups and stews, very good if you live in a cold farmhouse and it’s winter. I just add about a tablespoon 20 minutes before serving and it gives a nice body to the dish. Well worth trying.
